Instagram never tells you who left. FindUnfollower keeps each export you upload as a snapshot and compares the newest one with the last, so every unfollow between your uploads is listed by name, with a reason where the data allows.
Be wary of any tool that claims to show unfollows from before you installed it. Instagram does not expose that history to anyone, and neither can we.
The first export gives you today's picture: non-followers, fans and mutuals. It is stored as snapshot one. There are no unfollowers yet because there is nothing to compare against.
Each new export is compared with the previous one. Anyone in the old followers list who is missing from the new one is an unfollower; new names are gained followers. Upload weekly or monthly, whatever rhythm you want.
Where the export makes it possible, each unfollower is tagged: they unfollowed you, you unfollowed them (a mutual break), or the account was deleted or deactivated. Blocks look the same as unfollows to Instagram's export, so they appear as unfollowed.
Anything that happened before your first upload, and anything between two uploads that reversed itself (someone left and came back). The tracker is exactly as fine-grained as your upload schedule.
Every upload is kept as an audit with its date, follower and following counts, and the gained and lost numbers against the previous one. You can jump back to any audit from the dashboard, and the unfollowers caught so far across all audits are listed in one place.
On paid plans you can watch a handful of accounts you actually care about. When a new upload shows one of them has stopped following you, you get a banner on the dashboard and one email, instead of scanning hundreds of names yourself. It works from your uploads, not from polling Instagram.
Long lists are only useful if you can work through them. Mark names as viewed, whitelist accounts you follow on purpose so they stop appearing, leave a note, and download any list as CSV on paid plans.

Most unfollower apps need your Instagram login or a browser extension running inside your session. FindUnfollower needs neither. It runs in any browser on your phone or computer and works only from the data export Instagram gives you, so there is nothing connected to your account to revoke later.
As often as you download an export. Weekly or monthly is typical; a followers-only export is small and Instagram often prepares it quickly. Each upload is compared with the previous one, so a monthly rhythm gives you a monthly unfollower report, and the dates of both exports show exactly which period each unfollow falls into.
No tool can do that reliably. A follower list only shows who follows you now, and Instagram keeps no list of people who stopped following you. Your history starts with your first export, which is why it's worth taking one today. The export does include recently_unfollowed_profiles, but that lists accounts you unfollowed, not people who unfollowed you.
